At the base of Cradle Mountain in Tasmania, the twin rivers of Dasher and Fisher meet, and it is from there that Dasher+Fisher create their award-winning gin. So, in our collaboration, it’s only right to use the locally sourced twin berries of Blackberry and Pepperberry. Fermented with Belgian yeast and then refermented on blackberry, this purple pleasure is perfect for pouring. With blackberry for sweetness and pepperberry for spice, it’s a collaboration that results in everything nice!

This beer was fermented in oak with our house mixed culture and then refermented on feijoa and nectarine. The feijoa displays pungent and floral aromatics while the nectarine lends acidity and juiciness to the palate. We hope you enjoy this unusual marriage of fruits.

Barrel Aged Tart Saison with Eclipse Spectrum 5.2%.
This tart saison has been hopped in barrel twice using Eclipse Spectrum. Eclipse is the newest variety of hop to come out of Australia and displays gorgeous mandarin aromas and flavours. Spectrum is a new way of processing hops into a liquid form for coldside additions. Eclipse Spectrum has a wealth of delicate fruit and floral flavours that balance really nicely with this mellow and complex saison.

Barrel Aged Saison 5.5%
We liked this barrel so much we didn’t want to add much to it. A small dose of Motueka Hop Kief lifts the aromatics but otherwise the barrel and the yeast do all the talking. Oak forward but with enough acidity to cleanse the palate.

This oak aged sour ale was conditioned on fresh grapefruit juice and zest, as well as a handful of spices for added complexity. Think somewhere between a Paloma and a grippy Albariño. Light citrus on the nose with oak and funk on the palate.

A curiously aromatic sour ale, whirlpooled with Amarillo hops and dosed heavily with mango and passionfruit for its secondary fermentation. Now even more attractive, with 5.0% ABV and an eye catching new design. A fresh & sour hit of Mango & Passionfruit, perfectly balanced as all things should be.
